It takes about 6-10 months to grow galangal before she can dig it up and sell it. Young galangal that is dug up at 6 months old has a delicious taste, while old galangal that is 8 months old or older has a less delicious taste.Ms. Duangjai's method of digging galangal starts with digging 1 clump of galangal, which has about 25 plants. Then, she d igs it out to leave 5 plants per clump so that the galangal can grow and produce in the next generation.
